This basic scones recipe is a good starter. Use as is or add the optional ingredients listed at the end of the recipe.
Preheat oven to 400º F (200º C). Sift together flour, baking powder and salt.
Cut in butter until mixture is crumbly. Whip milk and egg and add to mixture.
Stir until a soft ball of dough forms.
Knead gently on a lightly floured
surface, turning a few times. Divide dough in half for easier handling and pat
or roll out dough to one half-inch thick circles. Slice into wedges or use a
shaped cutter. Place on lightly greased baking sheets. Bake 12 to 15 minutes or
until light golden brown. Makes 10 to 12 scones.
Optional: For sweet scones : Wash tops with cream and
sprinkle with sugar crystals or glaze with powdered sugar and lemon juice
mixture.
