Banana Bread Recipe

A banana bread recipe, is an easy and quick baked good you can make at home. It is moist and sweet, without being too sweet.

This is a recipe that has been passed on to me by my mother. I remember her making it often and now I make it for my sons, who in spite of being picky eaters, will eat this bread.

Also known as sweet breads or quick breads, which means it is leavened with baking soda and/or powder and the wet and dry ingredients are simply combined.

Sweet breads are a good, choice to use for a hostess, teachers, or holiday gift. Wrap them in foil and adorn with a bow - they are sure to be appreciated.

Banana Bread Recipe

  • 3 bananas, smashed
  • 1/ 2 cup butter, melted
  • 2 eggs, well beaten
  • 2/3 cup cold water
  • 2 cups flour
  • 1 cup sugar
  • 1 tablespoon baking soda
  • 1/2 teaspoon baking powder
  • 1/ 2 teaspoon salt
  • 1/2 teaspoon cinnamon

Preheat oven to 350 degrees F (180 degrees C) . Butter and flour (or spray with a non stick vegetable spray) the bottom and sides of loaf pans. 

Combine in a large bowl flour, sugar, baking powder, baking soda, salt and cinnamon. Set aside.

In medium-sized bowl mix together mashed bananas, eggs, butter and water.  Lightly fold the wet ingredients into the dry ingredients until just combined and the batter is thick. Do not over-mix. Scrape batter into pan and  bake until bread is golden brown and a  toothpick inserted in the center comes out clean, about 30-40 minutes. Place on a wire rack to cool for about 10 minutes. Run a knife around the sides of the loaves and then remove from pan. Serve with whipped butter.

Makes 4 - 8 x 4 in. / 20 x 10 x 6 cm. loaves (or two 9x5 in / 23 x 13 x 8 cm)
*Small loaves tend to bake more evenly
