Potato Soup Recipe
This cheddar broccoli potato soup recipe is a great combination of flavors - the base of potatoes, a healthful vegetable of broccoli, both enhanced with rich cheddar cheese. You can add more of what you like, such as extra cheese or lots of broccoli. Experiment with it and make it yours or enjoy just the way it is - delicious!

Cheddar-Broccoli Potato Soup
- 4 tablespoons butter
- 3 small celery ribs - chopped
- 2 medium onions, peeled and sliced thin
- 3 large potatoes, peeled, diced
- 4 1/2 cups milk
- 8 ounces cheddar cheese
- 3 tablespoons butter
- Pepper
- Salt
- Parsley
In medium fry pan, melt butter. Add celery and onion and cook until translucent.
Cook potatoes in boiling water for 10 minutes (or until mostly soft) in dutch oven or large double boiler, over direct heat. Drain water.
To the potatoes, add the onions, celery, milk, cheese and butter, and cook on low heat until cheese is melted, stirring often. Season to taste with pepper, salt and parsley. Continue to simmer, if necessary, until soup is sufficiently heated and blended. Stir often - do not let it burn. Remove from heat and serve with sprig of parsley for garnish. Yields 8- 10 cups.
