Cream Scones
Cream Scones are usually the scone of choice at an English or Victorian tea party.
They are a good partner to tea when you are not having much else to eat.

Scones Recipe
- 2 cups all-purpose flour
- 1 teaspoon salt
- 2 1/4 teaspoons sugar
- 1 teaspoon baking powder
- 3/4 to 1 cup heavy cream
Preheat oven to 425º F. Combine flour, salt, sugar and baking powder. Mix well. Add cream a little at a time until a soft dough forms - amounts will vary. Knead gently on a lightly floured surface about 15 seconds. Roll or pat dough 1/2 to 3/4 inch thickness Cut into wedges, rounds or shapes. Place on lightly greased baking sheets. Bake 10 to 12 minutes or until light golden brown. Makes 10 to 12 scones.
Optional: Wash/brush the tops lightly with cream and sprinkle with sugar crystals.
