Clotted Cream Recipe
If you want to know how to make a clotted cream recipe, use this Devonshire cream one below. Homemade requires a little experience but success is attainable and satisfying. If you have trouble locating unpasteurized milk or are simply don't have the patience, you can find the real thing at tea houses or on the internet.
Devonshire Recipe
Take unpasteurized, high fat content milk such as from a full cream jersey (will have at least 55% milk fat content) and pour into stainless steel bowl. Cover and put in the refrigerator overnight. Take bowl and place carefully over a pan of lightly boiling water. Boil about one hour or until it starts to bubble and rises around the edge. (Do not let any water into bowl. A double broiler could work well.)
Remove from heat and place bowl on top of a larger bowl of ice water to cool quickly and then place in refrigerator or a very cool place. When sufficiently cooled, skim cream off top, place in covered container and keep refrigerated. Use within a few days.
Mock Clotted Cream Recipe
3 ounces cream cheese
1 cup heavy or whipping cream
1 teaspoon powdered sugar
1/2 teaspoon vanilla
until thick. Cover and keep refrigerated.
