Chicken Tea Sandwiches
I call these 'Greek Chicken Tea Sandwiches' because I marinate them in Greek dressing. My family likes to put Greek dressing and seasoning on just about anything. It definitely gives a good flavor and helps keep the chicken moist.

You can make these hearty or petite according to the the type of teatime you are having - as well as the thickness and size of the chicken and bread.
For hearty servings cut thick slices of sourdough bread and use a whole piece of chicken. For petite ones, use thinly sliced but dense bread cut into small squares - keeping the crusts on, and thin slices of the breast.
Enjoy these simple, but tasty teatime sandwiches all year long!
Directions:
Marinate small boneless, skinless chicken, in Greek dressing for at least an hour. (One piece per person.)
Grill or bake at 375 for 40 minutes.
Remove from oven and place pieces on toasted sourdough bread. Add mayonnaise and lettuce if desired.
* You can use wheat bread in place of sourdough
