- 4 cups all-purpopse flour
- 4 teaspoon baking powder
- 3/4 teaspoon salt
- 1/2 teaspoon fresh basil
- 1/4 teaspoon fresh thyme
- 1/4 teaspoon ground red pepper
- 2/3 cup butter
- 1 cup cheddar cheese, shredded
- 3/4 tablespoon Dijon mustard
- 1 1/4 to 1 1/3 cup milk
Preheat oven to 425º F (200º C) . Combine flour, baking powder, salt, basil, thyme, pepper. Cut in butter, mixing until crumbly. Mix in 1/2 cup of the cheese. Add mustard and pour milk a little at a time until a soft dough forms - amounts will vary. Knead gently on a lightly floured surface about 15 seconds. Divide dough in half and roll out to 1/2 to 3/4 inch thickness. Cut into wedges, rounds or shapes. Place on lightly greased baking sheets. Sprinkle with remaining cheese. Bake cheddar scones 15 to 17 minutes or until light golden brown. Makes 8 to 10 scones.
